This recipe comes out really great and it takes a short time to cook.
1 cup uncooked rice
1 cup water
1 cup orange juice
1 tsp. reduced calorie margarine
Pinch of salt
1 tbsp. freshly grated orange rind
1/2 cup fresh orange sections without seeds
1.In a 2-quart microwave safe casserole, combine the rice, water, orange juice, margarine and salt.
2.Cover, microwave on High for 5 minutes.
3.Stir in the orange rind.
4.Turn the bowl 1/4 turn.
5.Microwave on high for an additional 10 minutes, turning the bowl after 5 minutes.
6.Do not uncover the bowl.
7.Allow to set covered for an additional 10 minutes or until all of the liquids have been absorbed.
8.Before serving, fluff with a fork, add orange sections and mix gently.
9.Serve with pride.
This dish makes about 6 servings which is about 100 calories.
